Umbrella Brewing – Versatility:

Umbrella Brewing Ginger Beer is really versatile. It can be used in all sorts of cocktails – rum-based of course, whisky’s great, and also gin.

The Drink:

The second ingredient is a new grain-based Genever with a little bit of sugar beet in there, which sweetens it up and bridges the gap between the gin and the rest of the ingredients.

The third ingredient is a home-made kaffir lime cordial.. it’s really really fragrant, gives the drink an exotic edge and works really well with the gin.

What age did you join the industry?
20 years in the industry! I started as a glass collector when I was 18 and loved the industry straight away. Its the only thing I’ve ever done

What was the last bottle of spirit you bought personally?
Im drinking a lot of Mezcal at the moment so I have to say a bottle of Tepeztate Mezcal. Its the grandfather of Agaves so is super good

What was the last beer you bought?
La Patrona Sta Oatmeal Stout. Am currently working on a project in Mexico and this beer is being listed on our Casa Pueblo menu. The craft beer culture here has recently exploded and there are some excellent beers coming from all regions in Mexico

What was last non alcoholic item you bought?
Whats that?

Favourite distillery?
For me it has to be Teelings in Dublin. Have known the guys for a long time and their set up and whiskey are amazing

Favourite Record Label?
Has to be Factory Records. I love the music produced from this label during this era.

Favourite Album?
Has to be The Stone Roses, The Stone Roses. So iconic and still a firm favourite of a lot of people today

Favourite Record Sleeve Art?
Has to be Peter Saville’s work on Factory Records label. Iconic and still recognisable by everyone

Favourite Bar (You don’t own)
My friend Danny McNeil runs a great Irish bar called Swift Hibernian Lounge in NYC. Its all about Irish Whiskey and Guiness with the best service of course

Favourite Restaurant?
I have quite a few but have to say one I always go back to is St Johns in Spitalfields. The food is amazing and champions where British food is at the moment

Favourite City?
NYC, tend to go at least once a year to get my fix

New Years Resolution?
To learn Spanish asap! Its an essential requirement in Mexico when you are trying to open a bar!

What do you have to do before you open a bottle of Umbrella Ginger Beer?
Smile with anticipation and turn bottle over to wake those great flavours!
